Heart disease and stroke are the leading health challenges in the U.S. right now underlining the role that we can take to protect our own health. The same is true when it comes to cooking our own food, there are several foods that it is important to cook thoroughly before we eat them. It's fine to tuck into a raw rump steak but the same is not true for a chicken leg, breast, or thigh.

According to the FDA, there are about 48 million cases of foodborne illness each year, with 128,000 hospitalizations and 3,000 deaths. This means that about one in six Americans will get food poisoning in any given year, and even though it may not be severe enough to hospitalize or kill them, it can still be very, very unpleasant. Some people are more vulnerable to the more serious effects of food poisoning including children, the elderly, pregnant women, and people with underlying health conditions or who are immunocompromised. Eating raw meat carries risks of foodborne illness, because they may be contaminated with pathogens, bacteria, and parasites including E. coli, Listeria, and Salmonella. By cooking meat to the proper temperature, those microorganisms are killed, making it safe to consume. These are some foods that must be cooked properly before you eat them.
