Some people occasionally enjoy a nice steak, perhaps with a bit of seasoning, and they aren't too particular with how it's cooked – perhaps medium-well, or even to the shock and horror of some, well-done. They don't know too much about how to cook it other than making sure it isn't raw. Others consider themselves steak aficionados, those masters of meat who know exactly how much salt and pepper to add, just the right temperature to sear it at, and precisely how long to cook it for.

Most of us fall into the first category and believe that cooking a tender, juicy steak is a difficult thing to achieve, something that is perfected by our local grill expert who prepares all of our steaks, burgers, and chops. Preparing an excellent cut of beef isn't too difficult. What's typically happening is that people are most likely not cooking their steaks the right way. Buying the highest quality meat won't protect it from a poor quality cook. Small mistakes can impact the steak's quality, causing you to end up with dry, tough meat instead of the ideal succulent steak.

To find common steak-cooking mistakes and how to avoid them, 24/7 Tempo looked at high-quality guides on how to cook steak, such as Masterclass, which features guides taught by professionals. We also looked at other published lists to see what food enthusiasts believed were the most common mistakes when cooking steak. These lists allowed us to narrow down what mistakes were more or less common. The science behind each section was checked to determine whether these had a basis in fact or if they were simply preferences, as well as ensuring our recommendations followed general food safety guidelines.
